Power Protein Salad with Brothein Dressing

 

Ingredients

  • 🥗 Salad Ingredients:
  • 1 cup mixed greens (rocket, spinach, kale)
  • ½ cup cooked quinoa (or gluten-free grain of choice)
  • ½ avocado, sliced
  • ¼ cup chickpeas (or grilled chicken for extra protein)
  • 1 tbsp pumpkin seeds
  • Handful cherry tomatoes, halved
  • ¼ cucumber, sliced

  • 🥣 Dressing Ingredients:
  • 2 tbsp Brothein (20g beef bone broth powder)
  • Juice of ½ lemon
  • 1 tbsp tahini or olive oil
  • 1 tsp honey
  • 1 tsp mustard (gluten-free if needed)
  • 2–3 tbsp water to thin
  • Pinch of black pepper and sea salt

Method

  1. Step 1: Make the Dressing
  2. In a small bowl or jar, whisk together the lemon juice, tahini/olive oil, honey, and mustard.
  3. Add the Brothein powder and stir until well combined.
  4. Slowly add water, a tablespoon at a time, until the dressing reaches your desired consistency.
  5. Season with salt and pepper to taste.
  6. Step 2: Assemble the Salad
  7. In a large bowl, layer the greens, quinoa, avocado, chickpeas or chicken, pumpkin seeds, cherry tomatoes, and cucumber.
  8. Drizzle with the Brothein dressing just before serving and toss gently to coat.
  9. Optional: Add feta, grilled halloumi, or a poached egg for extra richness.
